My Best Friend’s Kitchen is a series where I share all my best friend’s healthy recipes, the ones I love to eat and she loves to create. Today’s menu features her special cous cous recipe.

Couscous is a very good staple meal because it’s quick to make, versatile, and light but still satisfying, whether you serve it with salads or as a main dish!

My bestie, Manal, loves experimenting with different meals and always makes them delicious and healthy ( Seriously, it’s her hobby). Her inspiration for this recipe came from bits and pieces of other meals, but the best part is how flexible it is; every element of this recipe can be used in different recipes or enjoyed on its own. She usually makes this when we all get together for a girls’ night, and after trying this for the first time, I had to learn it myself. It’s one of many recipes I swear by!

This couscous recipe is super quick and straightforward to make. It combines cucumber salad, a delicious salmon recipe, and an avocado side dish that pairs perfectly with other dishes. Nothing says balanced diet more than this combo! It’s easy to prep and just such a good blend of flavors.

Ingredients Swap and Tips

This recipe contains fish ( Salmon ), but it can totally be swapped for chicken. If salmon isn’t something you enjoy very much or can’t access easily, this recipe also goes with any other type of fish ( like tilapia).

For the cous cous, any brand will do the job but rice is also a good alternative for this meal! My go-to rice is the Tropical Sun Golden Stella rice, which is very high-quality basmati rice!

Healthy Cous Cous With Salmon and Cucumber Salad

Easy cous cous recipe with cucumber salad and salmon under 10 minutes prep

Ingredients
  

  • 1 tsp Sesame oil
  • 1 tsp Honey
  • 1 Cucumber chopped
  • 1 small Garlic minced
  • 1 tsp Paprika
  • 1 tsp Soy sauce
  • 1 tsp Sesame seeds
  • ¼ Lemon
  • 2 fillet Salmon
  • ½ cup Couscous
  • 1 small Onions
  • Any preferable seasoning of choice
  • 2 tsp Chill flakes/powder
  • 1 Avocado sliced
  • 2 cubes Bouillon cubes
  • Salt
  • Black Pepper

Instructions
 

Salmon

  • Whisk up soy sauce, garlic, honey, sesame oil, paprika, black pepper, any seasoning of choice, chili flakes or powder(optional) and cut up lemon wedges / lemon juice
  • Rub the marinade onto the salmon and allow it to sit for 3-5 minutes
  • Place salmon in an oven ( on a foil covered oven tray) or airfry
  • Cook for 15-20 minutes at 180℃(350℉) in the oven or 10-15 minutes at 180℃(350℉) in the airfry

Cucumber Salad

  • As salmon cooks, chop the cucumber into slices
  • Mix with lemon, sesame seeds, sesame oil, salt and pepper.
  • Serve with your meal

Cous Cous

  • Boil 2 cups of water in a pot
  • Take boiled water out and pour the cous cous inside
  • Add in bouillon cubes and sliced onions as garnish and allow to steam for 10 minutes
  • Serve with salmon, cucumber salad and sliced avocado
